Been to mainland Spain (Costa Brava) in May week before when my boys were little and it was really nice. Warm enough to sit out in but not too hot for little ones.

Yes, its around 23c with a light wind, perfect for small kids, that why we went at the time of year, was a fantastic holiday, I stayed at Playa de'n Bossa but hired a jeep for 3 days and toured the island, class

Can be windy.
I've been to the Algarve in early May and it was nice during the day but could be cold at night. And a lot of tourist stuff wasn't available.

Balearics could be anything from red hot to cool and rainy in May. Summer yet to kick in fully but I'd risk it. Not been meself but it's a lovely island apparently.
