Its definitely oil/ghee relatedI wouldn't ever order chips from the Indian for myself but one of the bairns ordered some once and they were very nice. I think part of the flavour probably comes from being fried in the same oil as bhajis etc so would be difficult to replicate without that.

Anyone recommend a recipe I can make a large batch of in my instant pot?

I'm thinking of making tikka chiken or pre-cooked lamb separate, to add in just before serving.

Yeah, they're great.
Takes a little adjusting to though, as you have to have enough liquid to build the steam pressure, but as moisture isn't constantly escapaing, things can end up quite watery compared to normal methods.
I guess they're all largely the same? Mines an Instant Pot though, aye.Its the branded Instant Pot thing. Is that what you mean?
