Spiritualized have been mentioned already but for head phones Pure Phase is their best album. Jason Pierce did two separate mixes, one for the left channel and one for the right channel. Still sounds superb today with what appears to be panning between left and right but he didn't use any.

Listened to a couple of albums today and it reminded me of this thread. Two albums that are essential head/earphone albums but for rather different reasons. Lateralus by Tool and Nebraska by Springsteen. The former for the complexity of what is going on through album, the latter for the quite the opposite. Both equally justifiable however!
